Meatless Monday ** Jen's Herb Pasta with Vegetables and Tomatoes Recipe

        

         







        





            
           Ingredients
  • 1 1/2 gallon Water, cold
  • Salt
  • 1 lb. Linguine, dried
  • Mushrooms
  • Spinach
  • Zucchini   
  • Onion 
  • Tomato
  • Tomato Sauce
  • Garlic
  • Italian Seasoning
  • Pepper

          Prep time:           
          Cook time:           
          Ready in:           
          Yields: Serves four (4) people    

     
          Instructions - Linguine
  • Add water to the pot. Put a lid on and bring to a fast boil.
  • When the water boils. Add the salt, add the pasta and Stir.
  • Cook the pasta for 8-12 minutes.
  • Drain water immediately 
  • Add the desired sauce and serve.


           Instructions  - Sauce
  • Saute Mushrooms, Spinach, Zucchini, Onion , Tomato (1-2 Cup of each Veg sliced) (All Vegetables were grown fresh from the Garden of Miss Jen)
  • Add Tomato Sauce (14 Oz Can)
  • Cook on Medium heat for 10-15 minutes, reduce heat
  • Place pasta in serving bowl.Spoon vegetable mixture sauce over pasta
The serving suggestion for pasta is 4 ounces per person. This means that a pound of cooked pasta can feed 4 people approximately depending whether you're serving the pasta as an appetizer or as a main dish.

Meatless Monday - Easy Vegan Hobo Dinner recipe

If you like easy, Healthy & Tasty Meals then this is the perfect recipe for you.  Created by Ken Andersen (My Dad)


Ingredients
Tin Foil
2 Potato
1 Tomato
3 Broccoli
1/4 White or Red Onion
Jalapeno Pepper -  (5 slices)  Add more or less depending on what level of Spiciness you like)
Olive Oil or Vegetable Oil- 2 tsp
Salt and Pepper (Optional)


Prepare
Peel and chop the Potato, Tomato and Onion.  Break the Broccoli into medium size pieces. Slice and chop the Jalapeno Pepper (I leave the seeds in, but you can discard of them depending on your level of Spiciness) Place the ingredients in the center of the Tin Foil and Lightly drizzle Olive Oil or Vegetable Oil over ingredients.  Sprinkle Salt and Pepper over food.
Wrap Tinfoil around the Ingredients and make a square (Make sure it is wrapped tightly so as no food will fall out)
Pre-heat oven to 350 degrees
Cook for 20 to 30 minutes until potatoes are tender

Or....if camping throw in the fire and cook until potatoes are tender.
